Kami's Kitchen -- Gluten & Allergen-Free Food

Finally, easy, fabulous allergen-free food in one place! Woohoo!

Yum. I'm just sayin'... this Vanilla Apple Cake was amazing. I tried it on Sunday and Kami was right, it's pretty dang good.

Kami just started this new gluten-free and allergen-free food blog... it's fantastic. Although I don't have Celiac Disease, I've been seeing a nutritionist and have been advised to avoid gluten and dairy as much as possible. But I know all too well about the frustration of finding good recipes, food, and eating out when you have Celiac Disease. My mom, sister, 6 cousins, and best friend all have Celiac Disease and/or gluten intolerance. Some people think all this new Gluten-Free food is just a fad diet thing right now, but I don't believe that. I've seen the incredible positive effects of a GF diet not only in my family, but myself, almost immediately. I already feel so much better and have more energy this past month than I have in years.

Jumping off my soap-box, this blog is nice in that it shows how anyone can make normal, fantastic-tasting, allergen-free food. You can also download a pdf of each recipe to print, which is nice for those of us who don't want to deal with Keyboard Al Pomodoro.

I also like that she's starting to review food from restaurants and she shows specific brands of products to use. It makes it easy and you know it'll taste good. Anyone who's had a store-bought GF chocolate chip cookie knows how awful they can be, but Kami's homemade GF cookies are to die for. Let's just say was lucky enough to be her roommate for a couple years. Enough said.

That is fantastic news! I cannot imagine what you will do with more energy, since you are already on my "super-accomplishers" list. Maybe you'll just enjoy feeling better:)
